Dr. Beth's Almond Protein Bars

  • 5 tablespoons natural Almond butter
  • 1/2 cup maple syrup
  • 5 tablespoons water
  • 1 tablespoon coconut oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt
  • 2 cups thick rolled oats
  • 2-1/2 scoops protein powder
  • 1/3 cup raisins
  • 2 cup Almonds, chopped
  • 1 cup shredded coconut
  • 3 tablespoons ground flaxseed


Pre-heat oven to 300° F.

In a saucepan, combine the nut butter, maple syrup, water, cinnamon and salt with a whisk. Bring to a boil over medium heat. simmer for 1 minute.

Meanwhile, in a separate bowl combine the oats, protein powder, raisins, pecans, coconut flakes and flaxseed meal and toss well.

Pour the hot maple syrup mixture over the oats mixture and stir well to coat all the ingredients.

Spread the mixture into a flat pan — about a half-inch thick — and smooth out the top.

Bake for 20 minutes, then reduce heat to 250° F for another 30 minutes. Then turn off the oven and allow the bars to cool in the oven for an additional 30 minutes.

Remove from the oven and allow to cool to room temperature before cutting into 1x4 inch bars.
