Dr. Beth's Avocado Salad
Serves: 3-4
  • 2 large ripe avocados, peeled and cubed
  • 1 cup grape tomatoes, cut in half
  • 1/4 cup green onion, chopped
  • 1/2 cup red or yellow bell pepper, chopped
  • 1/3 cup feta or goat cheese crumbles

  • Dressing:
  • 2 gloves garlic, chopped
  • 4 tablespoons lemon juice, fresh
  • 3 tablespoons olive oil
  • 1/3 cup fresh cilantro, chopped
  • Sea salt to taste
  • Crushed red pepper flakes or cayenne to taste

Combine first 5 ingredients in large bowl. Mix dressing and pour over salad. Let marinate for a couple of hours in fridge before serving.
