Cauliflower Cheese Soup
Dr. Beth's Cauliflower Cheese Soup
Serves: 3-4

Steam one cauliflower, cut up into bite size pieces. Cook until tender.

Place in large sauce pan:
  • 1/2 cup finely chopped onion
  • 1 yellow or orange bell pepper, chopped
  • 2-3 red jalapeños, chopped
  • Sauté in one heaping tablespoon of EV coconut oil, about 10 minutes


Add two tablespoons whole grain flour, stir to coat vegetables, add two cups 2% organic milk and two cups organic chicken broth.

Add sea salt and crushed red pepper to taste. I also added some cayenne pepper. (-:

Heat to boiling and reduce heat to low. Add two cups of grated cheese. I used organic co jack. If you want a richer soup, you can add 2 to 4 ounces of cream cheese cut into small peices for easier melting. Stir and add in cooked cauliflower.

Serve and enjoy!!!
