Cauliflower Mac & Cheese
Dr. Beth's Cauliflower Mac & Cheese
Serves: About 4
  • 1-1/4 cups pasta of choice (about 5 ounces)
  • 1½ cups cauliflower florets - broken into very small pieces.... like 3/4 inch or smaller
  • 1 tablespoon butter
  • 1-2 cloves chopped garlic
  • 2 tablespoons organic corn starch
  • 2/3 cup milk
  • 1½ cups shredded Cheddar cheese
  • 4 ounces (1/2 package) cream cheese
  • 1/4 cup shredded parmesan cheese
  • ½ teaspoon sea salt
  • ⅛ teaspoon ground black pepper
  • Cayenne pepper to taste
  • Cholula sauce to taste

  • Step 1 - Place butter and chopped garlic in a large saucepan over medium heat. Cook until garlic is fragrant and just starting to brown. Add cornstarch cook, stirring constantly, until a thick paste forms, about 1 minute. Add milk; cook and stir until mixture thickens, 3 to 4 minutes
  • Step 2- Add cheddar cheese, cream cheese, parmesan cheese, sea salt, pepper, cayenne into milk mixture; stir until sauce is smooth.
  • Step 3 - Bring a large pot of lightly salted water to a boil. Cook pasta in the boiling water, stirring occasionally about 6 minutes. Then add the cauliflower pieces to the water and cook until pasta is tender yet firm to the bite, and cauliflower is soft... about 2-3 more minutes minutes. Drain.
  • Step 4 - add cauliflower and pasta into sauce. Add Cholula to taste and serve.
