Dr. Beth's Coconut Curry Chicken
Serves: 4
In the crockpot:
  • organic chicken cut in strips
  • 2 carrots, sliced thin
  • 1 red bell pepper, sliced in strips
  • 2 red jalapenos
  • 2 red chili peppers
  • 2 cloves garlic
  • 2 tablespoons red curry paste
  • 1 - 2 tablespoons Tai garlic chili sauce
  • 1 and 1/2 cans of lite coconut milk
  • At the end I added two handfuls of fresh spinach, some extra cayenne pepper and a pinch of saffron


It takes about 3 hours to cook, start it on high, after 2 hours I remove the lid ( to thicken the sauce) and switched to low for the last hour.

Also made organic brown jasmine rice with saffron to serve with it. (-:
