Dr. Beth's Coconut Curry Chicken
In the crockpot:
- organic chicken cut in strips
- 2 carrots, sliced thin
- 1 red bell pepper, sliced in strips
- 2 red jalapenos
- 2 red chili peppers
- 2 cloves garlic
- 2 tablespoons red curry paste
- 1 - 2 tablespoons Tai garlic chili sauce
- 1 and 1/2 cans of lite coconut milk
- At the end I added two handfuls of fresh spinach, some extra cayenne pepper and a pinch of saffron
It takes about 3 hours to cook, start it on high, after 2 hours I remove the lid ( to thicken the sauce) and switched to low for the last hour.
Also made organic brown jasmine rice with saffron to serve with it. (-:
