Dr. Beth's Simple Cucumber Salad
Serves: 2
1 small sliced organic cucumber
3 green organic green onions, sliced thin
1/2 organic orange bell pepper, sliced into small thin strips
2 and 1/2 tablespoons organic EVOO
1 and 1/2 tablespoons Organic Apple Cider Vinegar
Sea salt and black pepper to taste
Red pepper flakes to taste
Optional: feta cheese would have been excellent , but I had none.

Stir and serve and eat.
