Dr. Beth's Cucumber Salsa
Dr. Beth's Simple Cucumber Salsa
Serves: 4
Ingredients:
  • 2 cups finely chopped cucumber, peeled and seeded
  • 1/4 cup finely chopped red or green onions (I used green)
  • 1-2 jalapeno peppers, seeded and chopped fine (I used 2)
  • 1/3 cup minced fresh cilantro
  • 1 garlic clove, minced
  • 1/2 cup sour cream
  • 1-1/2 teaspoons lemon juice
  • 1-2 drops lime essential oil (I used Young Living)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon sea salt
  • Baked tortilla chip scoops


Directions:
  • In a small bowl, combine the first 5 ingredients. In another bowl, combine the sour cream, lemon juice, lime oil, cumin and sea salt. Pour over cucumber mixture and toss gently to coat. Top with crushed red pepper flakes to taste. Serve immediately with chips.


Notes:
  • Don't skip seeding the cucumber. If you do, you may end up with watery salad. To seed cucumbers, halve lengthwise and use a spoon to scoop out the pulpy centers. This is also an excellent topping for simple grilled salmon or other fish.
