Dr. Beth's Easy Lentil Soup
Serves: 4
  • One bag of dried lentils (about 2 cups)
  • about 5 cups water (soak, if possible, overnight or all day while you are at work)

Cook in crockpot on low for about 6 hours OR on high for about 4 hours - stirring occasionally OR on the stovetop for about 1 hour (if pre-soaked)

Add about 1/2 way through cooking:
  • 1/2 head of garlic
  • chopped cumin
  • about 1 teaspoon sea salt
  • cayenne or red pepper flakes (about 1 teaspoon)
  • 1 cup of chopped carrots (if desired)

When lentils are soft stir them to mash them up a little (or put in processor and puree) Stir in about 1/2 cup of PLAIN YOGURT or sour cream
