Dr. Beth's Gluten-Free Pumpkin Cookies
- 1 and 1/4 stick organic butter
- 1/2 cup honey
- 1 teaspoon liquid stevia
- cream together
- add two eggs
- 1 teaspoon vanilla extract
- 1-1/4 cups cooked pureed pumpkin
- 1 and 1/4 cup freshly ground flax seeds
- 1/3 cup coconut flour
- 1 teaspoon each sea salt, baking soda, baking powder
- 1 heaping teaspoon cinnamon and 1/2 teaspoon of cloves
- 1/2 cup white chocolate chips (Trader Joes brand)
- Instead of the white chips you could add slivered almonds or raisins.
Bake at 360° F for about 12-14 minutes.
Michael says they are a winner.
