Dr. Beth's Mediterranean Quinoa Salad
Serves: 3-4
Ingedients:
  • 2/3 cup quinoa
  • 1 and 1/2 cup water
  • 1 can black beans, drained and rinsed
  • 2/3 cup chopped red bell pepper
  • 1/2 cup chopped green onion
  • 1/2 cup chopped cucumber
  • 1 cup grape or cherry tomatoes, sliced into 2-4 pieces, depending on size.
  • 1/4 cup chopped basil
  • 1 cup crumbled feta cheese

Dressing:
  • 1/4 cup lemon juice
  • 1/3 cup olive oil
  • black pepper to taste
  • crushed red pepper to taste
  • 1/2 cup chopped green onion
  • sea salt to taste
  • 1-2 cloves garlic, minced fine



Directions:
  • Cook quinoa and water in a pot according to directions on the package, about 15 minutes. Let cool in fridge.
  • Prepare all ingredients while the the quinoa is cooling.
  • Place dressing ingredients in container in stir to combine before adding.
  • Combine all ingredients and toss together.
  • Let marinate in fridge for at least one hour.
  • Serve and enjoy.
