Dr. Beth's Mediterranean Quinoa Salad
Serves: 3-4
Ingedients:
- 2/3 cup quinoa
- 1 and 1/2 cup water
- 1 can black beans, drained and rinsed
- 2/3 cup chopped red bell pepper
- 1/2 cup chopped green onion
- 1/2 cup chopped cucumber
- 1 cup grape or cherry tomatoes, sliced into 2-4 pieces, depending on size.
- 1/4 cup chopped basil
- 1 cup crumbled feta cheese
Dressing:
- 1/4 cup lemon juice
- 1/3 cup olive oil
- black pepper to taste
- crushed red pepper to taste
- 1/2 cup chopped green onion
- sea salt to taste
- 1-2 cloves garlic, minced fine
Directions:
- Cook quinoa and water in a pot according to directions on the package, about 15 minutes. Let cool in fridge.
- Prepare all ingredients while the the quinoa is cooling.
- Place dressing ingredients in container in stir to combine before adding.
- Combine all ingredients and toss together.
- Let marinate in fridge for at least one hour.
- Serve and enjoy.
