Dr. Beth's Pumpkin Bars with Cream Cheese Frosting
- 4 eggs - room temp
- 1 cup brown sugar
- 1 teaspoon liquid stevia (or total 1 1/2 cup sugar)
- 3/4 cup olive oil (can use part melted butter)
- 1 15 ounce can Pumpkin - - I used about 3 cups
Mix above ingredients well
Add:
- 2 cups flour (I use 1 cup flour plus one 1 freshly ground flax seeds)
- 2 teaspoons cinnamon
- 2 teaspoons pumpkin seasoning
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon sea salt
Pour into buttered pan
15x10x1 - or I used 9x13 plus a 3x5
Bake at 350° for 25 - 30 minutes until just set.
Cool before adding icing
Icing
- 8 ounces cream cheese - softened
- 2 tablespoons maple syrup
- 1 teaspoon liquid stevia or more to taste
- 1 teaspoon vanilla extract
- 1/8 cup melted butter
- 1 to 2 tablespoons whole milk or 1/2 and 1/2
Mix well and spread on cooled bars
I like to refrigerate before cutting.
