Dr. Beth's Pumpkin Pancakes
Serves: 1
For each serving:
  • 1 half cup pumpkin purée
  • 2 large eggs
  • 3 Tablespoons ground flax
  • pinch of salt
  • 1/2 teaspoon cinnamon

  • Mix and cook on heated flat griddle.
  • Spread batter out so not too thick when cooking
  • Simple, fast and yummy!
  • Gluten free too!
