Dr. Beth's Pumpkin Pancakes
Serves: 1
For each serving:
- 1 half cup pumpkin purée
- 2 large eggs
- 3 Tablespoons ground flax
- pinch of salt
- 1/2 teaspoon cinnamon
- Mix and cook on heated flat griddle.
- Spread batter out so not too thick when cooking
- Simple, fast and yummy!
- Gluten free too!
