Dr. Beth's Salad Dressing: Feta Vinaigrette
Ingredients:
- Two tablespoons lemon juice or juice from one large lemon
- 1/4 cup extra virgin olive oil
- 3 tablespoons apple cider vinegar
- 1 teaspoon honey or several drops of stevia or monk fruit liquid extract
- one teaspoon Italian seasonings
- one small garlic glove or garlic powder
- one heaping teaspoon Dijon mustard
- Sea salt and black pepper to taste
- 1/2 cup feta cheese or more to taste
Blend in blender or processor about 15 seconds until well combined and smooth.
Store any leftovers in airtight container for up to 5 days. Let come to room temp before serving and whisk or shake before serving.
