Feta Vinaigrette
Dr. Beth's Salad Dressing: Feta Vinaigrette
Serves: 2
Ingredients:
  • Two tablespoons lemon juice or juice from one large lemon
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon honey or several drops of stevia or monk fruit liquid extract
  • one teaspoon Italian seasonings
  • one small garlic glove or garlic powder
  • one heaping teaspoon Dijon mustard
  • Sea salt and black pepper to taste
  • 1/2 cup feta cheese or more to taste


Blend in blender or processor about 15 seconds until well combined and smooth.
Store any leftovers in airtight container for up to 5 days. Let come to room temp before serving and whisk or shake before serving.
