Dr. Beth's Salsa with Black Beans and Avocado
Process together in a food processor:
- 1 onion ( I use 1/2 if it is really large)
- 1 clove garlic
- 1-6 jalapenos (green and red)
Then Add
- 1/2 red bell pepper
- 1-2 tablespoons tomato paste
- 3 or 4 medium tomatoes ( cut into quarters)
- 1 tsp sea salt
- 1-2 Tbsp lime juice
- 1 Tsp cumin
- 1 Tbsp red pepper flakes
- 1 Tbsp taco seasoning
Process
Add
- 1 handful cilantro (about 1 C)
Gentle pulse to combine
Place in large bowl and add:
- 1 cup cooked (or 1 15 oz. can of drained and rinsed) black beans
- 1 chopped avocado
- About a half dozen cherry or grape tomatoes cut in quarters
Toss together
Adjust according to how you like it - (add cayenne, sea salt, etc.)
Now you have a meal!
Serve with organic corn chips or with a poached egg on a toasted tortilla with cheese!
