Dr. Beth's Sauteed Zucchini
Serves: 2-3
Ingredients
- 1 and 1/2 tablespoons coconut oil or olive oil
- 1/2 cup sliced onion
- 2-3 cloves garlic, sliced thin
- 4 cups Zucchini, seeds removed if large. sliced or chopped into small pieces. bite sized.
- 1/2 teaspoon oregano
- Red pepper to taste
- Sea salt and black pepper to taste
- 1 cup fresh tomatoes (any kind), sliced or chopped to bite size pieces
- 1/2 cup fresh basil, chopped right before adding at the end
- 1/2 cup grated parmesan cheese
Directions
- Sautee onions in oil until they are starting to brown (medium heat).
- Add garlic and zucchini and cook on medium until zucchini is soft. Stir occasionally to cook evenly.
- Add the rest of the ingredients except for the cheese and stir to distribute evenly. Cook for 2 more minutes. Turn to low heat.
- Sprinkle the cheese evenly over top and cover with lid to melt.
- Serve hot.
