Dr. Beth's Summer Avocado Cucumber Tomato Salad
Serves: About 4
Ingedients:
- 1 large cucumber, peeled and sliced
- 1/2 cup sliced green onions
- 2 medium ripe avocados, peeled and chopped
- 3 medium tomatoes, halved and chopped (can also use grape or cherry tomatoes, halved)
- ½ lemon, juiced
- 1/2 cup chopped fresh cilantro
- 1 jalapeño, deseeded and chopped
- 2 tbsp olive oil
- sea salt, black pepper to taste
- red pepper flakes to taste
Directions:
- Place the onion in a bowl.
- Season with pinch of sea salt and drizzle with lemon juice. Let stand for 15 minutes.
- Add the rest of ingredients, season to taste with salt and black pepper and gently toss to combine.
