Dr. Beth's Summer Avocado Cucumber Tomato Salad
Serves: About 4
Ingedients:
  • 1 large cucumber, peeled and sliced
  • 1/2 cup sliced green onions
  • 2 medium ripe avocados, peeled and chopped
  • 3 medium tomatoes, halved and chopped (can also use grape or cherry tomatoes, halved)
  • ½ lemon, juiced
  • 1/2 cup chopped fresh cilantro
  • 1 jalapeño, deseeded and chopped
  • 2 tbsp olive oil
  • sea salt, black pepper to taste
  • red pepper flakes to taste


Directions:
  1. Place the onion in a bowl.
  2. Season with pinch of sea salt and drizzle with lemon juice. Let stand for 15 minutes.
  3. Add the rest of ingredients, season to taste with salt and black pepper and gently toss to combine.
